Recipe: My favorite nutritious banana bread

My go-to banana bread recipe which I make a couple of times per month. Super easy and quick to prepare! It’s great when you feel you want something sweet but without the sugar crash that follows. It contains protein, healthy fats and fibre so will keep you full for longer and energised by keeping your blood sugar levels steady. You can have it for dessert, snack or breakfast. I like to warm up a slice in the oven and then add a layer of butter + sprinkle of sea salt or some peanut butter. So delicious! Made with nutritious ingredients. You can make on the weekend, cut into slices and freeze it too. It’s a good one for kids too because it’s low in sugar. Hope you enjoy :-)

Ingredients

To make one loaf

  • 3 bananas mashed (go for the bananas with spot on them, the dark and ripened ones) + 1 extra banana

  • 3 eggs

  • 1-2 tbsp of honey (you want it to be liquid so warm a bit before using)

  • 200g ground almonds

  • 1 tsp of baking powder

  • 1 tsp of cinnamon

  • 100g of 85-90% dark chocolate (optional) cut in small pieces


Method:

  1. Preheat the oven to 180°C.

  2. Add the bananas, eggs and honey to one large bowl and mix everything together.

  3. Then, add the almonds, baking powder and cinnamon and mix.

  4. Finally stir in the chocolate chips to the mixture if using.

  5. Pour the batter in a lined loaf tin. Decorate the top with the extra banana. Bake for 45min to 1hr or until a knife comes out clean. Leave to cool for 45 min before slicing.

  6. Enjoy with a layer of peanut butter or butter and sea salt!


    You can tweak this recipe with what you like and experiment - add some flaxseeds, cacao powder, chopped walnuts, pecans, dates etc. Sprinkle pumpkin seeds on top before baking.
